Our goal is to provide our customers with flour at its peak freshness before the flavorful, volatile oils begin to degrade in quality and aroma. In order to accomplish this, we mill all our flours at low temperatures when you order them. Our facilities are located in the Sierra Nevada mountains and sometimes weather impacts our ability to get to our facility to mill.
